Delicious Vegetarian Stuffed Peppers

Hi guys! Today, I am sharing one of my all-time favorite recipes: Vegetarian Stuffed Peppers! As a vegetarian, it is sometimes hard to find super healthy recipes full of protein. These are super easy to make and require standard household ingredients. Only bell peppers, rice, onions peas, spinach, black beans, and spices!

Delicious Vegetarian Stuffed Peppers

Ingredients:

Rice:

-2 cups rice

-5 cups water

-1/4 teaspoon salt

Filling:

-1 large onion (or two small onions)

-1 1/3 cup fresh or frozen peas

-1 cup spinach

-15 oz black beans

-1 teaspoon pepper

-1 teaspoon cumin

-1/2 teaspoon chili powder

-1/2 teaspoon salt

Peppers:

-6 bell peppers


Directions:

1. In a medium sized pot, add 5 cups water and 2 cups rice together. Put the lid on and cook on low for around ten minutes. or until done.

2. Heat oven to 400 degrees.

3. Carve out the seeds and stem of the pepper, making the pepper hollow. Repeat for all 6 of the peppers.

4. Bake the peppers for around 15 minutes, flipping halfway through.

5. Cut up 1 large onion into small cubes

6. Cook onion n a saucepan until soft, stirring often.

7. Add in black beans, peas, and spinach into the saucepan, and stir to combine.

8. Remove the saucepan from heat and add in pepper, cumin, chili powder, and salt.

9. Add the rice and filling into the cooked peppers.

10. Eat and enjoy!
